			<content:encoded><![CDATA[<p>Coffeeco does a great job preparing your cappuccino every day, serving your coffee quick and providing customers with a safe and comfortable environment but we don&#8217;t share information as well as we could.  In light of this I feel it is incumbent upon us to remind our customers of our policies and practices to answer any questions which may arise.</p>

<li><strong> Multatuli Coffee was the first business in Eastern Ontario to support Bullfrog Power and we support it by paying a monthly fee that goes to develop clean energy sources.</strong></li>

<li><strong>Multatuli Coffee and coffeeco bring the compostable waste at all locations to our roastery on 721 Progress Avenue.  The compostables are placed in large rolling totes where they are stored until picked up by WSI for delivery to the regional compost facility.  We pay dearly for this service, but it is something we are proud to do.</strong></li>

<li><strong>Coffeeco uses compostable cups for all of it&#8217;s beverages and collects them for processing at the regional compost facility.</strong></li>

<li><strong>Coffeeco collects our own recycling and bring it to our Kingston Centre recycling bins which we pay to have removed.</strong></li>

<li><strong>Multatuli and Coffeeco support dozens of local charities, schools, church groups and fundraisers and is an active and valuable community member. </strong></li>

<li><strong>Unlike any other roaster I am aware of, Multatuli has a viewing window for customers to view, inspect the roasting process.  Customers vantage point is adjacent to the staging area for organic and ethical coffees, where bag markings and origins are clearly visible.</strong></li>

<p>In addition, this year following the lead of some of the most reputable coffee companies in North America, Multatuli Coffee Merchants decided to voluntarily withdraw it&#8217;s membership with Transfair Canada and replace it with a direct trade model.  This decision was not taken lightly, nor enacted in an effort to reduce our commitment to fair and ethical trade, but as an improvement for our sourcing and transparency.  As anyone involved in improving the lives and situation of coffee farmers knows, there are dozens of ways to help farmers and none of them are without weaknesses.  We have cherished our time with Transfair and feel that it was productive and informative for all involved however,  we are choosing to source coffee more directly and have a greater impact on individuals lives.  This change will significantly increase the prices we pay for green coffee, not reduce them. To put this decision in context, it is not unlike a chef who makes the choice to switch from a well known canned tomato to a local heirloom tomato farmer.  The canned tomato is great and suitable for most, but at some point the chef needs to challenge him/herself and their staff to improve on a great thing.  We have begun the sourcing project, and have pre-paid for a farm direct Ethiopian coffee which I will share more details about in a future blog.  The price paid for this coffee is more than 3x the established fair trade price model, but well worth it.  I have been active in Specialty Coffee for over 14 years now and have participated in the growth of Fair Trade, paid thousands of dollars in license fees to the certifying authority and taught our customers to think about their purchases.  In the past 5 years or so, new terms have evolved which better captures what I want to do with my coffee businesses, direct trade or farm sourced coffee.  In the coming months our customers will taste coffees sourced from Rainforest Alliance, Catholic Relief Services, Micro lot single farm, and multiple farms where you may know exactly who grew your coffee.  Having taught roasting, cupping and espresso courses in Manhattan, Atlanta, Anaheim, Houston, Detroit and in the near future Hong Kong, I am extremely well plugged into what the sentiment and direction Specialty Coffee is adopting and  I expect that our customers will enjoy this journey and benefit greatly from the increased information and transparency these new coffees will bring to the coffeeco experience.</p>
<p>In the next couple of days we will complete a transition for both of our websites to a wordpress based format, and all of the information appearing will be designed to keep our customers better informed.  In addition to this, we have engaged the aid of an individual who will help maintain the blogs, twitter and facebook accounts so that all reflect what is happening in store and at the warehouse.</p>
<p>Is anything coffeeco and Multatuli Coffee Merchants doing perfect?  No.</p>
<p>Should we be content with what we have achieved to date?  No, but we are making every effort to be a source of positive energy and change in our community.</p>

			<content:encoded><![CDATA[<p>As many of you know we have secured a lease for a new espresso bar on King Street facing Market Square in downtown Kingston.  I&#8217;ve loved sharing our ideas, successes and unfortunately our failures and posting them on our blog and thought this new store is the perfect opportunity to gather ideas from near and far to include in our new store design.  I am including a PDF of our new location numbered 322 on the drawing, and am encouraging enterprising individuals to draw in where they&#8217;d like the service counter to be, seating and washrooms.  I will take these contributions and post them in the comments section so we can all marvel at the suggestions.  The submissions don&#8217;t need to be technically correct, and can be simply drawn on a page, scanned and submitted.  The submissions must all contain seating for at least 20, 2 washrooms, a service counter with cash and espresso machine.</p>
<p>A note for all:   the front windows open in for maximum fresh air, the ceilings will be approximately 14 feet high, and the dividing wall is exposed brick, angled wall exposed limestone.  Have fun!</p>

<p>So here is the official announcement!  Coffeeco has succeeded in securing a lease for a downtown store directly facing Market Square.  The location is currently occupied by the Block and Cleaver Butcher Shop and will become available at the end of the year when the owner retires.  I have experienced many starts and stops when it comes to downtown real estate, but have been rewarded with what I consider to be one of the best locations in the city.  Residents and visitors alike are familiar with the three times weekly Kingston Farmers Market, Antique Market, Blues Fest, Buskers Rendez Vous, and the fantastic outdoor Skating Rink, all on our front door step.  While exact details of the inside of the building are a bit of a mystery right now to both landlord and tenant due to the existing refrigeration for the butcher shop, my experience tells me there is plenty of exposed limestone and brick to keep patrons happy.  As the days roll on, I will be releasing more details about the build out, material choices, signage and of course opening date.</p>

			<content:encoded><![CDATA[<p><a href="http://coffeeco.ca/blog/wp-content/uploads/2011/01/photo-81.jpg"><img class="alignleft size-medium wp-image-379" title="photo-8" src="http://coffeeco.ca/blog/wp-content/uploads/2011/01/photo-81-e1295837920346-224x300.jpg" alt="" width="224" height="300" /></a>I didn&#8217;t want the day to pass without commenting on my visit to <a href="http://samjamescoffeebar.com/">Sam James Coffee Pocket</a> on Bloor Street West in Toronto.  The visit was a revelation to me and something I&#8217;ve not stopped thinking about all day.  I&#8217;ve been around the coffee business for a while and have reached the point where I am rarely surprised and never amazed by what I experience.  High end coffee today is predictably alternative and always an attempt to replicate something <a href="http://www.intelligentsiacoffee.com">Intelligentsia</a> or <a href="http://www.stumptowncoffee.com">Stumptown</a> are doing.  Black and White promotional videos posted online complete with colourized coffee a la &#8220;Schindler&#8217;s List&#8221; are somehow needed to assert that &#8220;it&#8217;s all about the coffee&#8221;.  Opulent cafes are constructed using the finest materials, again to drive home, &#8220;it&#8217;s all about the coffee&#8221;.</p>
<p>Sam James Coffee Pocket is no bullshit &#8220;all about the coffee&#8221;, all 120 square feet of it.  It took more guts to open this location than it took to spend 500k to open a coffee palace an no one can tell me any different.  I have never been more proud to be in the coffee industry and I urge, plead with anyone who is considering getting into the coffee business to make a pilgrimage to Toronto and experience this marvel for themselves.  Awesome.</p>

			<content:encoded><![CDATA[<p>When I work alone, (I always prefer to work alone) I have the time and quiet to think.  My early work career was spent as a stone mason engaged in physically demanding work which was solitary in practise.  Each day, no matter how much effort I expended, I returned home refreshed after a day of thought and reflection.  It was during one of these days recently while working on my house renovation that I spent time considering what I wanted coffeeco to be.  This was process was accelerated by the plans in place to build a third coffeeco in downtown Kingston.</p>
<p>I have a considerable amount of experience in the coffee business, and have visited my fair share of espresso bars.  No doubt I, along with my close circle of advisors, could create a layout and menu which is both unique and modern.  But who is it for?  Who is coffeeco intended to please, me or my customers?  If I polled a hundred customers and asked them what is special about coffeeco, I doubt beauty, machinery, exotic coffees or pretentious trivialities would factor highly.  What I believe would be well represented is community, friendly engaged staff, care and attention to products and the local nature of our business.  It seems to me that a great many businesses indulge their own interests and hope to bring the customers along, rather than indulging the customers and enhancing those experiences.  Every time I read an online post describing the subtle nuances of an espresso bar&#8217;s products, I wish it was authored by a customer instead of the proprietor.  Maybe we should all make an effort to ask our customers what they taste and experience, rather than telling them what they are experiencing.</p>

			<content:encoded><![CDATA[<p>A quick post updating all on my thoughts relating to our new location at 250 Ontario Street.  The past two weeks, I&#8217;ve been waiting on a lease document from the landlord. This time has allowed me some more reflection on what I want this location to be.  When you walk into the store, the fantastic array of kitchen equipment is immediately apparent.  This equipment will essentially open up any and all possibilities for a new food manager to impress us with their creativity, imagination and execution.  But coffeeco is an espresso bar first and foremost, where the baristas serve the freshest and finest coffee available in Kingston.  In short, my job is to ensure coffeeco 3 will be an espresso bar with a full kitchen, not a kitchen with an espresso machine.  I hope to share photos of the renovations as they happen, in less formal blog posts over the next month when renovations begin in earnest January 3.</p>
